Adapted to the seasons of the year, the Istrian cuisine abounds in a diversity of always locally produced foodstuffs, marrying them with the Istrian olive oils and supreme wines. Regardless of the time of year, the Istrian cuisine always offers something new, treating its guests to the tastes and aromas of Istria.

This is also a philosophy of our chef Zoran, who bases his cuisine on a unique system of product supply, always founded on a local origin and depending on the season, harvest or catch. When it comes to food, there are no exceptions. Menus are conceived on an everyday basis, with locally produced and currently available fresh foodstuffs, such as Istrian ox “boškarin”, wild asparagus, truffles, mushrooms, cheese, prosciutto ham and olive oil. Apart from the choice of ingredients, great attention is also paid to the food presentation so that, for guests, each dish represents an unforgettable experience of getting to know Istria on a plate.
